Prepare the dough and let rest, overnight if possible. Take a fistful of dough, and roll it out to 6 (about 8 inch square) portions.
Prepare the filling by mixing the sugars, vanilla, cinnamon and butter. Fill a pastry bag for easy piping.
Prepare the apples by peeling, and coring and rolling in the cinnamon/sugar mixture.
Set the apples on top of each square, and form the dough around each apple, making sure to seal the ends.
Dust each dumpling with cinnamon/sugar mix.
Place the dumplings about 2 inches apart in an ovenproof dish lined with pastry paper.
Bake at 375 Farenheit for about 45 minutes or until the pastry is golden brown.
Once there is a lovely apple dumpling smell coming from the oven, check it to make sure it is browning nicely. You may need to bake them just a little bit longer.
