A classic recipe, from my mom's recipe box.
Preheat oven to 450° F.
For the pie filling, pare, and quarter the apples. Then core the apples, and cut the apples into 1/4 inch slices, and place in a mixing bowl. Toss apples with sugar, and let them sit for 1/2 an hour. The apples will expel juice, which should be discarded, or maybe used in a drink. Toss the sugared apples, with the nutmeg and cinnamon.
Make the crumb topping, by stirring together, all the french crumb topping ingredients, in a small mixing bowl. The mix will clump a bit, that's expected.
To assemble the pie, grease an 8 inch pie pan and then lay in a pie crust. Prick the crust with a fork, and flute the edge. Add apple pie filling, then dot with the butter. Cover with the crumb topping.
Bake at 450° for 10 minutes, then reduce heat to 375° F, and bake until done, about 35 minutes. Apples will be soft but not falling apart.
