In a large, deep frying pan heat oil over moderately hgh heat. Season chicken with 1/4 tsp each salt and pepper. Cook chicken, turning until well browned (approx 8 min). Remove. Pour off all but 2 tablespoons fat from pan.
reduce heat to moderately low Add ham, onion, and garlic to the pan and cook, stirring occasionally, unti the onion starts to soften (approx 2 min). Add bell peppers and cook, stirring occasinoally, until they start to soften (about 3 min longer)
add tomatoes, tomato paste, broth and remaining 1 3/4 tsp salt and 1/4 tsp pepper. Bring to a simmer. Stir in the ridce and add the chicken in an even layer. Simmer, partially covered, over moderately low heat until chicken and rice are just done (20-25 minutes). Sprinkle with parsley
