(PDQ) pretty damn quick, double this recipe if you want left-overs for Chicken Caesar Wraps for the next day. Looks very colorful (Lucy calls it artsy) and tastes delicious on a day when we are just sick of comfort food and want something summery and light! WE ALWAYS DOUBLE THE RECIPE SO WE HAVE EXTRA INGREDIENTS FOR CHICKEN CAESAR WRAPS THE NEXT DAY!
Dice chicken breasts into small cubes, season and fry in oil on medium- low heat until cooked thoroughly- 8-10 minutes. Season with Jammin Jerk seasoning well and set aside. I cook my eggs in this great Cuisinart egg cooker- always turn out fabulous! I use an egg slicer for perfect small cubes!
Chop lettuce into bite size pieces, add all other ingredients and toss! Add freshly grated parmesan cheese and season with Zingy Cheese Zest.
