Cauliflower and Arugula
Preheat oven to 425 degrees.
Mix cauliflower, oil, garlic and mushrooms. Roast 30 minutes, turning twice. Remove from oven and let cool.
Mix vinegar, Dijon mustard, salt, pepper, and oil. Mix with cauliflower, arugula, red onion, and Parmesan cheese. Serve cold.
May add black olives and substitute chives for red onion.
