CHICKEN: Season the pounded chicken with the Chinese 5 spice, seasoning salt, and pepper. Heat 1 tablespoon EVOO in a non-stick skillet over medium-high heat until shimmering. Add the chicken breast to the skillet and let cook without moving for 3 minutes. Flip and cook other side without moving for another 3 minutes. Remove to cutting board and let rest for at least 10 minutes.
SAUCE: Whisk together all of the sauce ingredients in a medium bowl. Set aside.
WRAP: In a medium bowl, mix together the salad mix, carrots, and cilantro. Pour about half of the sauce over the salad and mix to coat, saving the rest for dipping. Microwave the tortillas for about 10-20 seconds just to warm and soften. Lay out the tortillas, slice the chicken and add half to each tortilla, and top with the salad mix. Roll like a burrito and serve with the extra sauce.
