Ditalini pasta with white wine herbed butter sauce and asparagus
Bring 4qts water to boil salted lightly. Blanche asparagus for 30 -60 seconds once water boiling. Relive and set aside. Cook pasta according to package directions for al dente. When the pasta is added to the water, start the next step. Goal is to add the cooked pasta straight into the skillet with white wine butter sauce.
In large skillet over medium heat, sauté shallots in butter for 2-3 minutes. Add lemon juice and white wine, reduce half liquid (2-3 minutes). Add parsley, asparagus, and cooked pasta, toss well and serve.
