Wash asparagus. Bring pot of salted water to a boil and blanch in water until it turns bright green (3-5 minutes) depending on size. Remove from the heat and drain.
In a small skillet, heat the olive oil on medium-high heat. Fry the sage in the oil for 2-3 seconds. Remove from the skillet and transfer to a paper towel. Sprinkle with sea salt.
Place the asparagus on a platter. Scatter the red/yellow peppers, the onions and cherry tomatoes over the asparagus. Sprinkle with sea salt.
Drizzle with Tarragon Dressing and garnish with fresh sage.
