Au Jus Mushroom Rice – seriously delicious! Rice slow cooked in butter, onion, oregano, salt, pepper, beef broth, au jus gravy mix and mushrooms. I could make a meal out of this delicious rice!!! Ready to eat in under 30 minutes! Add some leftover steak, ground beef or pork for a quick main dish. #rice #beef #mushrooms
Ingredients:
¼ cup butter
½ lb sliced mushrooms
1½ cups long grain rice, uncooked
3½ cups beef broth
2 Tbsp dried minced onion
1 (1-oz) package au jus gravy mix
½ tsp oregano
salt and pepper to taste
Instructions:
Melt butter in a large skillet over medium high heat. Add mushrooms and rice. Cook until rice is golden, about 5 minutes.
Add remaining ingredients. Stir to combine.
Bring to a boil. Reduce heat too low. Cover and cook for 20 minutes, until rice is tender and all the liquid is absorbed.
Notes:
Can add leftover pork, chicken, or steak to rice mixture for a main dish.
