Pre-heat oven to 425F.
Mix all dry ingredients together.
Add sliced apples and mix in a large bowl.
Add mixture to pie pan.
Top with reserved butter.
At top crust and seal.
Brush top with 1 egg yolk.
Bake 10 minutes at 425F.
Lower oven to 350F and bake 30-40 minutes or until apples are tender.
The amount of sugar you use depends on the type of apples.
Aunt Fran says use sweet and tart apples.
