Suggest a better descriptionPreheat oven to 400. Line a baking sheet with foil. Lay bacon and tomato on foil. Drizzle tomato with olive oiil.
Season with salt and pepper. Bake 10 - 14 minutes or until bacon is crisp. Remove from oven, set aside.
Butter bread on one side. In a large nonstick skillet with lid, place 4 slices bread, buttered side down.
Top each with one slice cheddar, 2 strips bacon, 1/2 slice cheddar, 2 slices tomato, 1/4 avocado, cheddar slice.
Top with remaining bread, buttered side up.
Cover pan and place over medium heat. Cook 3 - 5 min or until golden. Flip sandwich, cover and cook another
2 - 4 minutes or until golden and cheese is melted.
