Easy potato recipe for crock pot.
Line a 6 quart crock pot with foil. Slice potatoes. Line the bottom of the foil lined crock pot with a layer of potatoes. Sprinkle with salt and pepper if desired. Add a few more layers of potatoes and onions and then the cut up bacon. The bacon does not have to be cooked. Top with a cup of shredded cheese your choice. I used Colby or Monterey Jack and 3 tablespoons of butter. Cook on high for 4-5 hours or low 8-10. Top with 1 cup of cheese and serve.
