Cut the bacon into 1 inch pieces. Set to sear/saute on insta pot and brown the bacon.
Remove bacon from the pot, discard the grease, then add the ground beef.
Brown for about 4-5 minutes, and drain the grease, if necessary.
Add the sliced onions, and continue to cook for an additional 2 minutes.
Add bacon piece back to the pot, the can of rotel, chicken broth, diced potatoes, and all the spices.
Stir well and cook on high pressure for 10 minutes, then do a 10 minute natural pressure release.
Turn off after the 10 minutes natural release, and set to sear/saute..
Add th cup of heavy whipping cream and stir well.
Then add the 16 oz of velveeta shredded cheese and stir well until fully melted.
