You can top this with milk, fruit, yogurt,applesauce or maple syrup or just enjoy it on its own fresh out of the oven!
PREP TIME: 15 min BAKE TIME: 30 min
Preheat oven to 350 degrees F. In a large bowl, combine the brown sugar oats, baking powder and salt. Combine the egg substitute, milk and oil; add to the dry ingredients and stir until blended. Let stand for 5 minutes.
Transfer to an 8 inch square baking dish coated with nonstick cooking spray. Bake in a preheated oven for 30-35 minutes or until a knife inserted near the center comes out clean. Sprinkle with cinnamon. Serve with yogurt and fruit if desired.
Since I love peanut butter with oatmeal I would probably add 3 Tbsp. or more when combining the milk, egg and oil mixture and then bake according to directions.
