a quick weeknight meal

Chop 1 pound of balogna and fry in large frying pan with a teaspoon of oil and 1 small diced onion. Stir occasionally until onions are translucent. Add 1/4 cup ketchup and 2 cups water. Season with 1/2 teaspoon pepper. Cover and simmer 10 minutes. Mix 1 heaping Tablespoon cornstarch with 1/4 cup cold water to make a slurry. Add to balogna and bring to a boil to thicken. Cook 1 minute longer. Serve over mashed potatoes, noodles or rice.
