Slice eggplant with skin on into 1/2" thick round slices.
Combine the remaining ingredients and pour over the eggplant. Toss to coat completely.
Place the slices in a single layer on a sheet pan and roast at 450' for 4 to 5 minutes. Turn slices over, roast additional 5 to 6 minutes until golden.
