Based on Gwenyth Paltrows Vegan Recipe
Preheat oven to 400. Line muffin tins with papers or spray with cooking spray.
Mix flour, baking powder, baking soda and salt in a large bowl. Set aside
In another bowl, mash bananas and mix in remaining ingredients except for the chocolate chips, dates, seeds and topper.
Combine the dry ingredients with wet ingredients and fold until combined. Mix the dates, chocolate chips and pumpkin seeds with a tbsp or so of flour to keep the add ins from sinking to bottom of recipe. Fold in to batter to combine.
Measure a 1/4 cup of batter into muffin tins (makes 15). Top with salad topper, press topping in slightly to prevent it from falling off after baking.
Bake for 20 mins.
