This is a recipe from my husbands side of the family. It is a rich and delicious cake that is quick and easy to make. Enjoy!
Preheat the oven to 350 degrees.
In a medium-size mixing bowl, beat the granulated sugar, eggs, and melted butter. Stir in the buttermilk and 3 bananas.
Add the 2 cups of sifted flour and the baking soda; mix well. Add the vanilla and 1/2 cup pecans and continue to stir until combined.
Pour the batter into a 9"x13" baking dish coated with cooking spray.
Bake for 25 - 30 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool completely before icing.
To make the icing:
In a small mixing bowl, add the powdered sugar and softened butter, stir until combined. Add the banana and then the pecans; mix well. Spread over the cooled cake and serve. Yum!
