Preheat oven to 350. Line an 8-inch square baking pan with parchment paper, leaving a 1-inch overhang on all sides.
Stir together oats, bananas, cinnamon, and vanilla in a bowl until well combined. Fold in walnuts, flax seeds, and chocolate chips. Pour mixture into prepared pan, and spread out the edges.
Bake in preheated oven until firm and slightly browned, 12 to 15 minutes. Using parchment paper overhang, lift out from pan. Transfer to wire rack, and let cool completely, about 20 minutes.
Cut 8 bars. Wrap bars individually in plastic wrap. Place in ziplock freezer bag and store in freezer for up to 1 month. Thaw bars at room temperature until soft.
