Suggest a better description1. Preheat oven to 375 degrees F and lightly grease a standard size muffin tin or use muffin liners.
2. Mash the bananas in a large mixing bowl.
3. Add in the eggs and mix together.
4. Add brown sugar, baking soda, salt and whisk for one minute.
5. Stir in vanilla, melted butter and mix.
6. Add flour and oats and stir with a spoon or spatula until just combined.
7. Fold in the white chocolate chunks that have been coarsely chopped.
8. Divide batter evenly among 12 muffin tins, filling until the top (as full as it can be using an ice cream scoop).
9. Add crumble ingredients to a small bowl (2 Tablespoons Earth Balance, 5 Tablespoons Flour and 1/4 Cup White Sugar) and mash until combined but still crumbly. Top the muffins with the crumble.
10. Bake for 23 minutes and let cool.
