Adapted from pepper.ph Boracay Calamansi Muffin hack with added green tea taste of Matcha. Tart and earthy. You can't eat just one.
1. Mix milk and calamansi together. Don’t worry if it curdles. Set aside.
2. Sift dry ingredients (flour, baking powder, matcha powder, salt) together
3. Cream butter and sugar for 2-3 minutes.
4. Add eggs one at a time, mixing well after every addition.
5. Add milk mixture and flour mixture into the creamed butter mix.
6. Mix until well blended, taking care not to overmix.
7. Spoon into a nonstick muffin pan (the 12 cup kind).
8. Bake in a preheated 375-degree oven for 20-23 minutes or until muffins test done.
[I wonder if the silicon muffin pan means I have to bake a little longer.]
If using a mini-muffin pan bake for 20-23 minutes or until toothpick inserted comes out clean.
I used a silicon 12-cup muffin pan. Makes cleanup easy. These muffins slipped out of the pan and after they cooled, they were tender and full-bodied. The tart of the calamansi juice melding with the sweet, grassy punch of the matcha powder. I used 1 Tbsp to be on the safe side, but if you like intense matcha greenness, use 2 Tbsp and let me know how it goes.
