Great basic spiced meatball for a variety of middle eastern dishes
Combine 1st 13 ingredients and 2 TBSP OIL in large bowl, blend thoroughly. Using moistened hands and 1/4 cup for each, shape mixture into about 20 oval patties approx 3.5x1.5x.5 thick.
Heat 2 tbsp oil in heavy skillet. add patties cook until browned (aout 4 minutes per side if they're going into a sauce at the end) Until cooked through if not being finished in a sauce. If in sauce simmer for 20 minutes in sauce to finish, then tilt pan to spoon fat off the top of sauce.
Can be made as kefta kebabs, in a tomatosauce, or lemon herb sauce, with bulgur instead of breadcrumbs, etc.
