Suggest a better descriptionMix together dry ingredients. Introduce eggs, one at a time. Add olive oil and mix well. If dough is too dry, add water until ball starts to form and dough is slightly sticky.
Turn dough out onto lightly floured surface. Knead until smooth ball forms.
Cover tightly in plastic wrap, then cover again in another layer. Store in refrigerator until ready to shape and fill (at least 1 hour).
Divide dough into four sections, and roll out to desired thickness with rolling pin. Using roller attachment for mixer, roll out pasta on setting 1. Repeat with settings 2 and 3.
Lay sheet on lightly floured surface and fold both ends into middle. Fold again to make small rectangle and roll out with rolling pin.
Using pasta roller, run pasta sheet through settings 1 through 5 or 6.
Lay pasta sheet flat on lightly floured surface again. Cut pasta sheet into thirds. Using pasta cutter, cut pasta sheets into noodles. When completed, nest string pasta on sheet pan mixed with semolina flour. Finished pasta can be refrigerated for use within a day or frozen for later use.
Drop fresh pasta in boiling salted water, and cook for no more than 5 minutes. Drain pasta in colander. Take immediately to pan with prepared sauce and turn out on a serving platter.
