Makes: 1 large loaf (9x5x3 pan) or 2 smaller (8x4x2 pans)
1. Proof the yeast with the sugar in about 1/2 c. warm water.
2. While that's proofing, get 3 1/2 c (450 g.) unsifted flour into bowl with salt and whisk well. (Save 1/4 c. flour for kneading.)
3. Pour in your yeast, then add 3/4 c. warm water. Mix until it forms a dough.
4. Turn dough out on lightly floured surface and knead until it becomes smooth and elastic, between 4-10 minutes. The dough should spring back quickly when poked. Let rest for 5 minutes. Clean the bowl with warm water.
5. Butter the bowl, then put the dough in and turn so the entire surface of the dough is coated in butter. Cover with plastic wrap and put in a warm, draft-free place t rise to double in size - 1-2 hours.
6. Once the dough has doubled, punch the dough down, turn it onto a lightly floured surface, and knead well (just a few minutes.) Let rest 5 minutes.
7. While it's resting, butter your pans. Form the dough into a loaf(s) and place in pans. Cover for a second rise to just below the edge of the pan.
8. Pre-heat the oven to 400 degrees. Bake 35 min. (you can mist with water halfway through for a crisper crust.) To see if they're done, remove from oven and tap on bottom - it should sound hollow. If it does, put back in oven without the pan for 5 min to get crisp. Let cool for 2-3 hours before slicing.
