Basic milk enriched white bread. Great got sandwiches or sliced fresh with homemade soup.
Place yeast into 1/4 cup of warm to the touch water and add 1 tsp of sugar , set aside to proof for about 5-10 mins.
Sift 5 cups of flour ,salt into bowl of a stand mixer, using the whipping attachment by hand stir up salt and flour so that salt is not atop the flour.
Place dough hook attatchment on machine.
Add yeast mixture to flour and then turn on mixer to lowest setting.
Add warm milk to flour about 1/3rd at a time and on both sides. Continue mixing if mix seams alittle dry add 1 tsp of warm water at a time until dough forms together and pulls away from the sides. Continue kneading/ mixing for between 8-10 minutes until dough is smooth and elastic.
Spray Pam original non stick spray into a large bowl then dump dough into the bowl turning once to coat the dough. Cover the dough with a damp cloth or plastic wrap sprayed with Pam . Let the dough rise until doubled Aprox 1 hr.
uncover dough and lightly punch down. Dust working area with light coating of flour then turn dough out onto it. Fold 1/4 of length down and 1/4 of length up then same for the sides.
Like making an envelope . Now with general pressure roll envelope into a log. Pinching seam together and folding and pinching ends under and together.
Spray Pam into an 8x4x2.5 loaf pan then place loaf into pan. Cover with same coated plastic or damp towel and let rise again until doubled about 1 hr.
Preheat oven to 450 for 15 minutes. Once loaf has risen taking a very sharp knife slice I to loaf about 1/4 inch depth twice lengthwise , in a small bowl place the egg white and a splash of cold water and mix well. Brush egg wash onto top of loaf gently.
Place loaf centered into oven and upswing a spray bottle Mist about 1/4 cup of water onto heat elements creating steam. Immediately close oven.
Bake at 450 degrees for 10 minutes then turn down and bake At 350 degrees for an additional 30 minutes. Remove loaf when crust is a golden brown and the center measures 180 degrees.
Turn loaf out and place on cooling rack. Let cool completely before serving. Good luck with that last instruction it never happens that way at my house.
