This quick and easy meal can be made in just under 13 dollars! All you need are a few basic ingredients are you ready to make a beautiful dish into a work of art that tastes just as good as it looks!
1. Clean rice with cold water until clear (optional). Place rice in a pot with 2 and a half cups of water. Add a touch of salt and let it come to a boil. When the water is finally boiling turn the heat down and let it simmer for 15 minutes with the lid on. After 15 minutes take off burner and let rest.
2. Heat olive oil with garlic. After about 3 minutes add in your celery & onions. Give it a pinch of salt and let the onions and celery sweat until soft. Add cumin, paprika, chili power, hot sauce, sugar, salt and pepper. Stir. Add in canned tomatoes, bring to a boil and let simmer for 5 minutes. After it has thickened add a cup of water and bring to a simmer for 5 minutes.
3. Pour in Basmati rice into tomato sauce and fold in gently. Cook on low heat for 2 minutes take off burner and let rest.
4. Preheat oven 300 degrees. Season chicken breast with salt and pepper. Place on hot grill and cook skin side down for about 3 minutes (depending on thickness of breast). Flip over and cook. Brush chicken with harissa sauce and place in over for 5-8 minutes.
Zesty Cilantro
1. Heat cilantro in hot water for 30 seconds and place into cold water to shock them. Put cilantro into food processor and gradually add olive oil. Add a touch of lime zest with red wine vinegar. Salt and pepper to taste.
Plate and enjoy.
