2. Meanwhile, beat the egg/eggs with
the herbs of your choice, freshly
ground black pepper, and a pinch of
salt in a small bowl.
3. Pour the egg mixture into the pan
and stir gently with a wooden spoon
so the mixture that sets on the base of
the pan moves. Stop stirring when it's
nearly cooked to allow it to set into an
omelet.
4. Serve with chopped vegetables and
bread aside. Enjoy!
Suggested seasoning: dried
basil/parsley/rosemary (a pinch),
ground black pepper (a pinch), salt (a
pinch).
