Suggest a better descriptionHeat olive oil in a large skillet over medium heat. Saute the diced onion until tender, add garlic and stir until fragrant.
Add pasta, diced tomatoes, chicken broth, BBQ sauce, and chicken to the skillet. Stir to combine, cover and bring to a boil. Reduce heat to low and simmer, stirring occasionally until pasta is tender, about 15 minutes.
Top the pasta with the shredded cheese and cover with the lid until the cheese melts, about 3 minutes.
Top with French Fried Onions, Cilantro and drizzle with extra BBQ sauce if desired.
