Vegan main dish
In a medium bowl, mash half the beans. Add spinach, corn, cumin, 1cup cheese and remaining beans, 1/2 t salt, 1/4 t pepper, and mix to combine.
Spread 1jar salsa on bottom of slow cooker. Roll 1/2c mixture into each tortilla. Place rolls seam side down in a single layer.
Top with remaining salsa and cheese.
Cover and cook on low for 2 1/2 to 3 hours on low. Sprinkle with chopped scallions before serving, if desired.
Use a 4 - 6 quart slow cooker.
