Suggest a better descriptionheavily salt both sides of brisket, put in very hot pan and sear both sides. Remove from heat when browned
Remove skin from slab bacon, save for later. Chop bacon
Chop 3 onions 4 cloves garlic and 3 stalks celery
Add new oil to same pan used to brown brisket, add and cook bacon
When bacon almost done, add onion, celery and garlic to pan, salt and cook
Remove stems from mushrooms, add to pan and cook down
Place brisket to center of pan
Add 2 cups balsamic vinegar & 3 cups chicken broth to pan
Add bay leaves and thyme bundle, add more salt
Cover pan with foil.
Place in oven at 375 for 2 1/2 hours (turn after 1 hour)... Remove foil last 30 minutes Remove from oven. Remove brisket from pan, tent with foil and let sit for 20 minutes. Simmer juices a little to reduce to a thicker sauce Slice brisket and our gravy on top
