Cook ground beef in skillet. Drain fat and add chorizo, onions, and 2 cloves garlic. Mix tomato and enchilada sauce together and add seasonings. Pour a little sauce in the bottom of 2 9x13 pans to cover. Soften tortillas in microwave about 4 at a time. DIp in sauce. Put a little meat mixture, cheese and olives and roll. When pans are full top with remaining cheese and then cover with remaining sauce. Bake at 350 for 30 min. Can sprinkle olives on top instead of rolling or omit altogether.
