Melt the butter in a skillet. Add the onions, prosciutto and oil, and cook until the onions are golden, about 5 minutes. Add the beef and the mushrooms and cook, stirring until the beef is browned and crumbly, about 8 minutes. Drain off excess liquid.
Combine in the broth, tomatoes, tomato paste, beef mixture in the crock pot. Cover and cook on LOW or HIGH until the flavors are blended, 5 to 5 hours on LOW or 3-4 hours on HIGH. Cook the noodles according to the package directions. Drain well and stir into the broth mixture. Stir in the noodles. Divide among 4 bowls and top each serving with the croutons.
