In a large bowl, using a mixer combine the egg yolks and sugar. Mix until sugar is complete dissolved and the eggs have turned a pale yellow color.
Continue mixing in the melted butter and buttermilk and beat to combine the ingrediants
Add in dry ingredients (flour, baking powder, salt) to the egg mixture until blended thoroughly. Do not over mix.
Add in Vanilla extract
In a separate mixing bowl beat the egg whites until soft peaks form.
Gently fold the egg whites into the waffle batter. Do not over mix!
Coat waffle iron cooking spray and heat waffle iron as per manufacturers instructions.
Once heated pour batter in iron to just cover waffle design. Close, flip and cook until desired outcome.
