Place in large pot and cover with water plus 4 inches, add white wine and cook until all clams are open. remove meat from clams and set aside for chowder. strain broth through FINE strainer to remove any grit and sand, do this twice. measure stock, example if you have 7 quarts of stock you will use 6 quarts of heavy cream. heat butter and bacon fat in lg pan, sauté vegetables until soft, add stock and reduce by 1/4, at this point add cream and dill and reduce by 1/4 again. Season with salt and pepper through the cooking process when necessary. thicken with slurry. strain chowder to remover vegetables and set aside on sheet pan to cool. if broth needs to be thickened more place back on stove and add more slurry. cool
