Best Cinnamon Rolls
Make Dough:
Combine warm milk, yeast, sugar, salt, butter, and egg with hand mixer (or stand mixer with dough hook). Add in flour until it starts to incorporate into the dough. Add more flour as necessary so that the dough pulls away from the sides of the bowl; dough should be tacky but not stick to your hands. It should be soft - go by feel. Transfer dough to a lightly greased bowl, cover with a towel, and let it rise until double in size, about 1 hour.
Lightly grease a baking sheet. Punch down the dough and roll into a 12x18" rectangle.
Do FIlling:
Brush dough with 1/2 cup (1 stick) melted butter. In a small bowl, combine the brown sugar & cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use a sharp knife to cut into 12 1" slices. Place slices on prepared cookie sheet, cover, and let rise 30-45 minutes.
Preheat oven to 325 degrees. Bake the rolls for about 14-20 minutes, until just kissed with brown on top (may need to remove some and leave others for more cooking) - best if they aren't undercooked or overcooked.
Make Glaze:
While rolls are baking, make the cream cheese glaze - use a hand mixer to whip together cream cheese and butter until light and fluffy. Whip in powdered sugar and vanilla. Ad enough milk to achieve a drizzle-like consistency.
Frost the rolls while still warm. Serve immediately or cool and store. Stays good for 4-5 days.
NOTE: Cream cheese frosting doesn't harden (see other glaze recipes if you want a hard glaze).
