Yummy chicken quesadillas with a hint of lime.
Dice and cook chicken thoroughly. When fully cooked, mix in Mojito Lime marinade packet, tomatoes, black beans and sweet corn.
Place one tortilla shell on a hot pan. Spoon about a 1/2 cup of chicken mixture onto one half of the tortilla shell, top with queso quesadilla cheese, and fold tortilla shell in half. When the first side is slightly browned, flip the quesadilla over and lightly brown the other side.
When browned on both sides and cheese is fully melted, remove onto a plate and serve.
Tope with salsa and sour cream if desired
