Next Day:
Transfer beans to pot and recover with water, add salt and pepper and cook until beans are soft.
For Soffritto:
Soak quajillo chiles in warm water for 20 minutes. Puree chiles, 1 onion, 1 bell pepper, 5 cloves garlic, and cilantro, Place into saute pan and cook for 10 minutes. When black beans are soft add soffritto to black beans
