New Years dinner
Drain peas and put in Dutch oven or heavy soup pot. Add ham (if using slab bacon cut into 2 in. Chunks). Cover with 10 cups water and turn heat to high. Add salt, onion, bay leaf, black pepper and allspice.
Bring to boil then to simmer for 1.5-2 hours until peas are tender. Add water as needed to keep liquid 1 in. higher than beans. Stir occasionally. Turn off heat and check seasoning. Mixture should be brothy. Remove meat and chop into pieces.
Put wide skillet over med-high heat. Heat oil til wavy. Add garlic and red pepper. Let sizzle without browning. Add greens, stir to coat and add 1 cup water and salt to taste. Add ham, reduce heat to medium and cook with lid ajar about 20 min til soft.
Put greens and meat in soup bowl and ladle peas over. Sprinkle with scallions.
