We love this recipe from the great blog, Ambitious Kitchen. We enjoy it as a delicious healthy entree but it could also be a side. We usually make the rice a day in advance so you don't have to wait for it to cool. If short on time or energy, you can replace the vinaigrette with Bragg's apple cider vinegar and EVOO. It's not as good but it works pretty well.
