Layer bread in baking sheet and coat with cooking spray. Bake for 18 minutes or until toasted.
Cook bacon in skillet over medium heat until crisp. Remove bacon from pan reserving 1 Tbl bacon grease. Cut bacon into 1/2 inch pieces. Stir oil into bacon drippings in pan. Remove from heat and stir in vinegar, pepper and salt.
Combine lettuce, tomatoes and onion in a large bowl. Drizzle with vinaigrette. Add bread and toss well to coat. Sprinkle with bacon and cheese. Serve immediately.
Makes four 2 cup servings.
