French cup cake rich in butter and ground almond or almond mill
1. Preheat oven to 220 degrees Celsius (depending on your oven )
2. Grease 8 friand moulds or friand tray
3. Melt butter in a small saucepan over low heat for 5 - 8 mins until light golden. Remove from heat and set aside to cool.
4. Place ground almonds in a large bowl. Stir in icing sugar and flours. Stir to combine.
5. Stir in beaten egg whites ( forms white peaks )
6. Strain cooled butter into mixture and stir until well combined.
7. Swirl through half the blueberries
8. Spoon mixture into prepared pans. Top with remaining blueberries & sliced almonds
9. Bake for 5 mins @ 200 degrees Celsius. ( depending on your oven )
Reduce oven to 180 degrees Celsius (depending on your oven) and bake for a further 15 minutes until pale golden and firm.
10. Remove from oven to cool for 10 minutes.
11. Loosen edges with a knife. Turn onto wire rack to cool.
12. Dust with icing sugar to serve.
Make sure the egg white is beaten until stiff. Additional 10 grammes butter maybe be added if preferred. This recipe is with reduced sugar and additional 1/2 cup sugar maybe added if sweeter friend is preferred. If friand still to the pan, make sure pan is well greased. You need to adjust oven temperature as it varies from oven to oven
