Great receipe for a group!!! Make sure you use can blueberries...fresh or frozen won't work! Make a double batch for a group!!! Happy breakfast!☕
Whip cottage cheese in medium bowl until creamy. Add eggs,sugar, and salt. Mix well. Add flour until batter becomes thick, in electric mixing bowl. Refrigerate until ready to cook. Batter may be prepared a day or two in advance. When ready to cook, brush griddle with melted butter and oil. Drop batter by tablespoons to make pancakes about 3 inches in diameter. When bottom is lightly browned and bubbles have formed on surface, turn over and brown on other side. Place pancakes on plate with blueberry sauce on the,, and a generous dab of sour cream.
Blueberry sauce
16 ounce can blueberries
2 teaspoons cornstarch
1 teaspoon sugar
Remove 2 tablespoons blueberry juice to small bowl. Add cornstarch and dissolve. Place blueberries in medium saucepan and add cornstarch and sugar mixture. Bring to boil and cook just thickened, about 3 minutes. Serve hot.
