1. Spray 12” skillet with cooking spray, heat over medium heat. Add mushrooms and onions; cook 5 to7 minutes, stirring occasionally, until tender. Stir in oil.
2. In medium bowl, beat egg product, milk, salt and pepper with whisk. Pour into skillet. Cook, without stirring, until mixture begins to sets on bottom and around edge. Gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom.
3. Sprinkle with bacon. Cook 2 to 3 minutes longer or until egg mixture is cooked through. Top with tomatoes.
