Suggest a better descriptionPreheat oven to hot. Cut little incisions in the beef with a small pointed knife and insert slivers of garlic. Place the beef into a baking dish, fat side up. Sprinkle generously with pepper and salt. Reduce oven to moderately hot. Bake beef for 1 1/2-2 hours - its best not to overcook. I find 1 3/4 hours always seems to be just about right, perfectly cooked and deliciously moist and pink in the centre (1 1/2 hours for medium rare and 2 hours for well done). Cooking times will vary with the size of the roast. Stand for 15 minutes before carving. Serves about 10-12 for a main meal or 20 for supper with crusty breads.
