Suggest a better descriptionIn a tall, thick-bottomed pot, melt butter over medium-high heat until foaming. Add carrots, celery, and onion and cook, stirring, until translucent, about 6 minutes.
Brown meat, pouring off fat between batches if necessary.
Deglaze with wine and add marinara. Add bay leaves.
Add stock, lower heat to simmer. Add fish sauce. Continue to simmer, stirring every few minutes, until sauce is thick, about 3 hours. Discard bay leaves. Stir in cream & nutmeg.
