cook pasta
slice chicken into strips, season with salt and pepper
heat butter and oil in large skillet over medium low heat
add chicken
cook until golden brown
remove chicken-set aside
add garlic to skillet, cook 1 minute
add broth, bubble up and reduce about 1 1/2-2 minutes
add half and half, heavy cream, salt, and pepper
add parmesan-whisking until all combined
allow to heat and thicken
remove from heat- return chicken, grape tomatoes, spinach, and pasta
toss and serve
