Suggest a better description-Prepare 2 Skillets on your stove
-Peel and dice the sweet potato into 1/2 inch squares
-Slice up the pepper into long strips
-Crack the two eggs into a bowl, mix with salt, pepper, and milk
-Put the sweet potato cubes into the skillet and cook for about 3 minutes
-Add the onion and pepper and cook covered for 5-6 more minutes, or until the sweet potato is soft
-Now add the egg mixture and scramble the eggs in your second skillet
-Stir occasionally and add the salt, pepper, and cheese to the sweet potatoes within the last minutes of cooking
-Place into a bowl and add a bit of basil for garnish!
**if meal prepping, is able to be stored in a sealed container for 3 days.
