Preheat oven to 350. In a large bowl, mix all the dry ingredients, whisking together well.
Add carrots and apples and mix well.
Fold in raisins and nuts.
Mix wet ingredients together and pour it over the batter. Mix well and pour into greased muffin tins. Fill the tins to the top - they don't rise much. Bake 15-20 minutes at 350. Makes 2 dozen. Freeze well, and you should if you're not going to eat right away. They go bad quickly - probably because of the flax seed oil.
