Pizza dough: combine the yeast, sugar, salt, oil and water in a large bowl. Stand in a warm place for about 15 minutes or until frothy. Add the flour, mix to a soft dough. Knead dough on a lightly floured surface for about 5 minutes or until the dough is smooth. Place the dough in a lightly oiled bowl: cover, stand in a warm place for about 30 minutes or until doubled in size. Knock back the dough with one good punch. Leave in a warm place until slightly risen.
Pizza sauce: Meanwhile, blend or process un drained tomatoes with remaining ingredients until smooth. Add spinach to a large pan of boiling water, cook until wilted; drain. Add to a bowl of iced water; drain. Squeeze excess water from spinach. Place spinach in a bowl; toss with oil, chilli and salt and pepper to taste.
Preheat Pizza oven or the oven to 230C (210C fan-forced).
Divide Pizza Dough into 4 pieces - you will need 2 for this recipe (see Pete's Notes). Roll out 1 piece of Pizza Dough into a 30cm round, place on oiled pizza tray. Prick with a fork to eliminate air bubbles when cooking.
Spread dough with 1/3 cup Pizza Sauce, then sprinkle with cheese. Arrange the spinach and tomatoes on the pizza.
Place into Pizza oven, then break 3 eggs on top; cook on medium for about 4-6 minutes or until browned and crisp (bake in regular oven about 15 minutes).
Top with half the prosciutto and ricotta. Season with salt and pepper. Repeat with remaining ingredients.
Pizza sauce and Pizza dough suitable to freeze.
