This is a great quiche recipe I found on AllRecipes.com (thanks Bella and Chron). I have made several nice modifications - more eggs, less cream, and definitely saute the veggies! A great meal for your Christmas morning family and guests!
Makes (2) 9-inch pies.
1. Preheat oven to 375 degrees.
2. Fry pork sausage on medium heat until evenly brown. Drain any grease, rinse pork sausage in a strainer under warm water, and set aside.
3. Saute the spinach, onion, mushroom and garlic in a frying pan in a tablespoon of olive oil. After sauteing each, drain off as much of the water as possible - very important to ensure the quiche sets up correctly.
4. In a stand up mixing bowl, beat the eggs, half and half, heavy cream, nutmeg, salt and pepper for about 1 minute. Stir in the pork sausage, spinach, onions, and mushrooms. Add all of the Swiss cheese, and 3/4 of the sharp cheddar. Save the remaining cheese for a topping (optional). Add all of the contents into the pie shells, dividing the mixture evenly.
5. Bake uncovered in the preheated oven for 45 minutes. Take the pies out of the oven, top the pies evenly with the remaining cheese, and bake for 5 more minutes. The pies should be slightly bubbly or lightly browned. Let the pies cool for 10 minutes, serve and enjoy!
